Nature, simple, fresh and local were the common words repeatedly mentioned by owner and chef Sam Aisbett during our conversation. I thought it was an interesting start point in researching for the mural. There was an underlying element that connects these aspects together, that is ‘roots’. Having ‘roots’ is staying true to our inspirations, ideals and origins, ‘roots’ also brings us back to the ground where our produce comes from.
In the mural, we see the strange and beautiful deep sea creatures, land animals, plants and herbs. These elements highlight the inspiration to the process in developing the recipes.
